Spinach Salad with Cherries
Dressing:
1/4 cup olive oil
1/4 cup red wine vinegar
2 teaspoons honey
1/8 teaspoon black pepper
Salad:
5 cups cleaned torn spinach leaves, stems removed
1 cup bite-size fresh pineapple wedges
1/2 cup dried tart cherries
1/2 cup thinly sliced red onion
Crumbled feta cheese, if desired
For the dressing, combine oil, vinegar, honey and pepper in a medium bowl; mix well.
For the salad, combine spinach with pineapple, cherries and onion in a large salad bowl. Spoon dressing over spinach mixture; mix to coat salad with dressing. Serve topped with feta cheese, if desired. Makes 4 servings.
Smoked Turkey and Cherry Salad
Dressing:
1/2 cup olive oil
1/4 cup lime juice
3 tablespoons chopped fresh tarragon (or 1 tablespoon dried tarragon)
1 tablespoon balsamic vinegar
1 teaspoon granulated sugar
Salt and pepper, to taste
Salad:
8 cups mixed salad greens
3 cups chopped cooked smoked turkey
1 cup dried tart cherries
1/2 cup chopped green onion
1/2 cup toasted slivered almonds
For dressing, combine olive oil, lime juice, tarragon, balsamic vinegar and sugar in a medium bowl; mix well. Season with salt and pepper.
For salad, divide greens between 6 dinner plates. Arrange turkey, dried cherries, green onions and almonds equally over each serving of greens. Drizzle with dressing just before serving. Makes 6 servings.
Cherry Walnut Vinaigrette
1/4 cup Dried tart cherries
1 medium Shallot
2 cloves Garlic, peeled
3/4 cup Fruit-flavored vinegar
3/8 cup Orange juice
3 tablespoons Honey
1 1/2 cups Walnut oil
Chop cherries, shallot and garlic in a food processor; pulse until finely chopped. Add fruit-flavored vinegar, orange juice and honey; puree. With food processor on, slowly add walnut oil; mix well. Season with salt and pepper to taste. Yield: 3 cups or 24 (2-tablespoon) servings
Serving suggestions:
--Serve with a salad of butter lettuce, Gorgonzola cheese, crispy pancetta bits and toasted pine nuts. Garnish with dried tart cherries. Add grilled chicken for an entrée salad.
-- Serve with an all-red Caesar salad of red endive, shaved Parmesan cheese, garlic croutons and dried tart cherries. Add chicken for an entrée salad.
-- Use to dress an orzo or wild rice salad of arugula, red onion, toasted pecans and dried tart cherries. Add grilled beef or lamb for an entrée salad.
