Cherry Chewbilees
Cherry Chewbilees
1 cup margarine, softened
3/4 cup granulated sugar
3/4 cup firmly packed brown sugar
2 eggs
1 teaspoon vanilla extract
2-1/4 cups all-purpose flour
1 teaspoon baking soda
1-2/3 cups coarsely chopped white chocolate or vanilla milk chips
1-1/2 cups dried tart cherries
1 cup cashews, coarsely chopped

Combine margarine, granulated sugar, brown sugar, eggs and vanilla in a large mixing bowl. Beat with an electric mixer on medium speed until thoroughly mixed. Combine flour and baking soda; gradually add flour mixture to butter mixture. Stir in white chocolate, dried cherries and cashews. Drop by rounded tablespoonfuls onto ungreased baking sheets.

Bake in a preheated 350-degree oven 10 to 12 minutes, or until light golden brown. Do not overbake. Let cool on wire racks; store in a tightly covered container. These cookies freeze well. Makes 4-1/2 dozen cookies.

Champion Cherry Bars
1 cup margarine, softened
3/4 cup granulated sugar
3/4 cup firmly packed brown sugar
2 eggs
1 teaspoon vanilla extract
2 1/4 cups all-purpose flour
1 teaspoon baking powder
1 (12-ounce) package vanilla milk chips
2 cups dried tart cherries
1 cup coarsely chopped pecans

Combine margarine, granulated sugar and brown sugar in a large mixing bowl. Beat with an electric mixer on medium speed until well blended. Add eggs and vanilla.

Combine flour and baking powder; gradually add to mixture. Stir in vanilla milk chips, dried cherries and pecans. Spread dough evenly in greased 15 x 10 x 1-inch baking pan.

Bake in a preheated 350-degree oven 20 minutes, or until light golden brown. Do not overbake. Cool in pan, then cut into bars. Store in airtight container. These bars freeze well. Makes 4 dozen 1-1/4 x 2-1/2-inch bars.

Cherry Almond Toffee Bars
1 1/2 cups all-purpose flour
1/2 cup confectioners' sugar
3/4 cup cold margarine or butter
1 (14-ounce) can sweetened condensed milk
1 egg, beaten
1 teaspoon almond extract
1 (6-ounce) package toffee chips
1 cup sliced almonds
3/4 cup dried tart cherries

Mix flour and sugar in medium bowl; cut in margarine or butter until crumbly. Press firmly on bottom of 13 x 9 x 2-inch baking pan to make crust. Bake for 15 minutes; set aside.

Blend sweetened condensed milk, egg and almond extract in large bowl; stir in toffee chips, almonds and cherries. Spread over prepared crust. Bake in a preheated 350-degree oven 25 minutes, or until golden brown. Cool in pan on wire rack. Cut into bars. Store, covered, in refrigerator. Makes 24 to 36 bars.
